Swift Cinnamon Rolls
A low carb alternative to the treat we know and love
Ingredients for Dough
4 tablespoons full fat cream cheese
1 cup mozzarella cheese
2/3 cup almond flour
4 tablespoons sweetener of choice
2 large eggs
1 tablespoon vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
Ingredients for filling
1/2 cup melted butter
2 tablespoons (or more) sweetener, or brown sugar alternative sweetener
2 teaspoons cinnamon
Preheat oven to 375 F.
Soften the cream cheese and mozzarella together in a sauce pan or microwave safe bowl.
In a larger bowl combine the softened cream cheese and mozzarella, along with the rest of the dough ingredients. Mix well.
Roll or pat out onto plastic wrap or parchment. The dough will be sticky. Grease your hands with oil of choice to make this part easier.
Add filling to the rolled out dough rectangle. Roll into a jelly roll, cut into slices, place on a parchment lined pan.
Bake for 15 minutes.
