
Boiled Icing
2 cups sugar
1/2 cup corn syrup
1/2 cup water
2 eggs whites
2 tablespoons sugar
1 teaspoon vanilla
Cook 2 cups sugar, corn syrup, and water to soft ball stage, approximately 238 degrees.
Do not stir after sugar is dissolved.
Beat the egg whites until stiff, add in 2 tablespoons sugar and beat thoroughly.
Slowly pour hot syrup into the egg whites, beating constantly. Beat until thick enough to spread, then add vanilla.
