Banana Pudding Popcorn

Taste the goodness of banana pudding wrapped in the crunchiness of popcorn!

Ingredients:

10-12 cups popped corn

1 cup butter

3/4 cup sugar

1 package banana pudding powder (3 ounces) or gelatin

1 teaspoon each banana and vanilla flavoring

1 tablespoon corn syrup

3 tablespoons water

2 Cups crumbled ‘Nilla wafers

Step 1: Preheat oven to 300 degrees F (150 degrees C). Place parchment or grease a 9x13 inch baking pan or 2 separate pans.

Step 2: Butter the sides of a heavy saucepan, 2 quarts or larger.

Step 3: Pour popcorn across the prepared pan/pans.

Step 4: In the saucepan over medium heat, combine butter, sugar, vanilla and banana flavoring, corn syrup, water, and pudding/gelatin powder. Stir together, and heat to 250 to 265 degrees F, or until a small amount of the sugar syrup dropped into cold water forms a ball.

Step 5: Pour the mixture evenly over popcorn and stir until coated. Add in the crumbled ‘Nilla wafers and stir again to combine. Place popcorn in preheated oven and bake 5 minutes. Stir, then bake again 5 minutes more.

Step 6: Let popcorn cool, break into pieces and store in an air tight container.
